Combine sweet and spicy with this great crab recipe and dip the deep fried mantou in the sauce for a really good time. Don’t shellfish, jio all your friends and share-share lah!
Clean and prepare the crabs (remove gills and cut them into quarters)
Blend re-hydrated dried chillies, red chillies, chilli padi, shallots, garlic cloves, galangal and lime juice into a paste.
In a pan, add in the belacan and 5 tbsp of oil and stir for a few seconds.
Then add in the blended paste and stir fry until it is aromatic before adding in the fermented bean paste, ketchup, sugar and salt. Stir until well-combined.
Add in the crabs and stir fry until they are well-coated.
Pour in the hot water. Cover and simmer for 8-10 minutes.
While waiting, deep fry 1 packet of mantou (as per package instructions) then set them aside.
When the crabs turn bright red, mix in 2 beaten eggs and stir until well-combined.
Serve the crabs with the fried mantou on the side and garnish with some chopped spring onions, coriander and sliced red chillies.
